Instructions

  1. Roast the vegetables: Preheat oven to 425°F (220°C). Add the butternut squash, cauliflower, red bell pepper, onion, and garlic to a large baking sheet. Drizzle with olive oil and season with Italian seasoning, ½ tsp salt, and black pepper. Toss to coat and spread into an even layer. Roast for 20-25 minutes, tossing halfway through, until the vegetables are tender and lightly caramelized.
  2. Cook the pasta: Meanwhile, bring a large pot of salted water to a boil. Cook the Chickapea Penne for approximately 2 minutes less than the package instructions, as it will continue cooking in the oven. Drain and set aside.
  3. Blend the sauce: Transfer the roasted vegetables to a high-speed blender. Add the broth, milk, and remaining ¼ tsp salt. Blend until completely smooth and creamy. Taste and adjust seasoning as needed. If the sauce is too thick, add an extra splash of broth or milk until it reaches a smooth, pourable consistency.
  4. Assemble the pasta bake: Reduce oven temperature to 400°F (200°C). In a large bowl, toss the cooked pasta with the hidden veggie sauce until evenly coated. Transfer to a baking dish and spread into an even layer.
  5. Add the cheese: Sprinkle the shredded cheddar evenly over the pasta.
  6. Bake: Bake uncovered for 15 minutes, or until the cheese is melted and the sauce is bubbling around the edges. For an extra golden top, broil for an additional 1–2 minutes, watching carefully to prevent burning.
  7. Serve: Allow to cool for 5 minutes before serving. Enjoy!

How to
Cook and
Not Guess

  1. Boil 10 cups of salted water.
  2. Add your pasta to the boiling water.
  3. Stir a few stirs so they don’t stick together.
  4. Maintain a steady boil for 5-8 minutes or until you reach your desired level of doneness.
  5. Drain, rinse and serve with your favourite sauce.
  6. Then think, “wow, I didn’t really have to guess while I cooked, thanks Chickapea.”
